Moist Chocolate Muffins

Barring the religious significance of Easter, this holiday is all about CHOCOLATE. And I’ve gone through a whole load of chocolate recipes in the past.

Moist Chocolate Muffins

Here’s another great one to add to the list — a super moist chocolate muffin, stuffed to the gills with chocolate chips, nuts and seeds (or whatever you want in it, really). Happy Easter!

Recipe for Moist Chocolate Muffins

Makes 3 dozen muffins.


Dry Ingredients:

  • 125g all-purpose flour
  • 35g unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100g filling (I’ve used half chocolate chips and half assortment of nuts and seeds)

Wet Ingredients:

  • 1/4 cup vegetable oil
  • 1 egg
  • 100g caster sugar
  • 1 tsp vanilla extract
  • 1/2 cup yoghurt
  • 1/4 cup milk


Step 1: Preheat your oven to 200°C (400°F). Line your muffin tins with paper liners.

Step 2: In one bowl, sift in the dry ingredients (except the filling). Add the filling, reserving some for the top, and mix. In another bowl, add all the wet ingredients and combine well.

Step 3: Add the liquid mixture to the dry mixture and fold everything together. Fill each muffin cup only three-quarters full. (Using a disher will make the job a lot easier.) Sprinkle over the reserve topping. Bake for 25 minutes.
