Okay, sorry the posts haven’t been as regular lately. Work, life and things in general just got in the way of blogging. That’s not to say I haven’t been baking, of course. I’ll always make time for baking.

Lime Yoghurt Cake

Here’s another super simple recipe I whipped up a while back when I wanted a cake with little fuss. Eight ingredients, some mixing and baking, and you’ll wind up with this summery, zesty lime cake!

Recipe for Lime Yoghurt Cake

Serves 4 to 6

INGREDIENTS

Wet Ingredients

  • 100g caster sugar
  • Zest and juice from 1 lime
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup plain yoghurt

Dry Ingredients

  • 120g all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder

DIRECTIONS

Step 1: Preheat your oven to 175°C (350°F). Grease and line one 6-inch round cake tin.

Step 2: In one bowl, mix all the wet ingredients together. In another bowl, sift together the dry ingredients. Add the wet ingredients to the dry and mix. Pour batter into tin and bake for 50 minutes.

To serve, you can simply dust over some icing. Or if you want something a bit more special, whip up some of my basic buttercream icing, using lime juice as the liquid portion and lime zest as the main flavouring.
