Right now, it’s a little over 24 hours to the lunar new year. It’s times like this that I count myself so fortunate to be able to celebrate two new years. It’s like another chance to start again if the first new year was a little slow off the mark.
Just like the new year festivities associated with the Gregorian calendar, Chinese New Year is a time for family and lots of food. For me, there are things I only bake at this time of the year.
One of them is pineapple tarts. I make my own pineapple jam, but if you’re really short on time, there’s plenty of great store-bought alternatives. The tarts themselves are much quicker to whip up and make a great base for any fruit-based jam.
