I know my Muslim friends will be baking up a storm in preparation for family visitations this Hari Raya Puasa.
Here’s a super simple peanut butter cookie recipe that’s perfect with coffee and tea while
gossiping catching up with the relatives.
I’m pretty certain that all the ingredients are Halal, but do let me know in the comments below if something is Haraam.
- 100g unsalted butter, softened
- 200g caster sugar
- 1 egg
- 160g peanut butter, smooth or crunchy
- 160g all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
Makes about 3 dozen cookies.
Step 1: Preheat your oven to 175°C (350°F). Line your sheet trays with baking paper.
Step 2: Cream the butter and sugar together until light and fluffy. Beat in the egg and peanut butter. Sift in the flour, baking powder and soda and mix those in. Refrigerate the dough for at least an hour.
Step 3: Make tablespoon-sized dough balls either with a disher or by hand and space them out on the sheet pan about 2 inches apart. Use your thumb to press down each dough ball lightly. Or for a more decorative finish, use a fork to press down on the dough balls, either once to get parallel lines or in an ‘x’ to get a mesh pattern.
Bake each tray for 12 minutes.
