On a day to celebrate love, I ironically fall out of love. With my cookie press.
While I love the convenience of a cookie press, I’m not too fond of the appearance of the final cookie. As you can see they’re bumpy-looking. I think some designs just don’t lend well to extruded dough. However, if you need cookies in a pinch, then a cookie press is still the way to go.
These are vanilla cookies that are sandwiched together with yummy Nutella. And yes, they’re pink hearts, so they’re perfect for that special someone.
- 250g unsalted butter, softened
- 100g caster sugar
- 1/4 tsp salt
- 1 egg
- 1 tsp vanilla extract
- A few drops of red food colouring
- 300g all-purpose flour
- 20g corn flour
Makes about 50 sandwich cookies.
Step 1: Preheat your oven to 175°C (350°F).
Step 2: Cream the butter, sugar and salt together until light and fluffy. Add the egg, vanilla and red food coloring and beat in to achieve a pink batter. Mix in the flours to finish the cookie dough.
Step 3: Using the plate design that makes hearts (looks pretty much like a male appendage), press out cookies onto an unlined sheet tray.
Bake each tray for 14 minutes. When cool, marry pairs of cookies together with Nutella.
