Mixed Berry Crumble

If Christmas Dinner was the big marathon, New Year’s Eve is like the cool-down. For the last meal of 2013, I kept the menu simple and easy just to relax with my family.

Mixed Berry Crumble

It was an easy but celebratory kind of dinner with roast chicken and several sides. For dessert, I just wanted something really uncomplicated, so I went for a berry crumble, which is really as simple as it sounds: berries + crumble topping = easy deliciousness. (Okay, there’s a bit more work than that, but not much at all.)

Crumbles are relaxing, easy desserts because they’re just so informal. There’s nothing pretty about them. It’s always going to be a mess of fruit, sauce and crispy topping on your plate. But they’re super yummy nonetheless.

And you can pretty much throw any kind of fruit under crumble and you’d get a pretty awesome dessert. I decided on frozen mixed berries because apple can be a bit pedestrian. (Even though I’ve made apple crumbles many times over.)

Berry mixes are pretty, no? Berries have to be imported where I live, so they’re never at their best after a long shipment. Frozen berries are great because they’re picked at their ripest and flash-frozen to keep them that way. So use frozen berries in recipes where you need to cook the fruit. (Of course you can use fresh berries if they’re in season and accessible to you; just decrease the total baking time by 5 minutes.)

 

INGREDIENTS
  • 50g unsalted butter, cold and cubed
  • 50g all-purpose flour
  • 50g rolled oats
  • 100g caster sugar
  • 300g frozen mixed berries
  • 25g all-purpose flour
  • 100g caster sugar
  • 1 tsp vanilla extract

Serves 4 to 6 people.

DIRECTIONS

Step 1: Preheat your oven to 200°C (400°F). 

Step 2: Using the tips of your fingers, rub the butter into the flour, oats and sugar until you get a sandy mixture.

Step 3: In your baking dish, toss in the frozen berries and stir through the flour, sugar, and vanilla. Sprinkle the crumble mixture evenly over the top of the berries. Bake for 40 minutes. Serve warm with cold cream or vanilla ice cream.
