At night before bed, I’m almost always snacking on granola while watching YouTube or reading from my Kindle. It’s not the healthiest of habits but it’s part of my bedtime routine these days.
So I’m always left with the (#firstworld) problem of granola crumbs which are not very snack-friendly. Normally, I’d stick them in muffins, but this time round, I tossed them in cookies just for a laugh. Oh, and threw in some peanut butter for good measure.
110g unsalted butter, softened
125g peanut butter
100g caster sugar
50g brown sugar
1/2 tsp vanilla extract
125g all-purpose flour
1 tsp baking soda
Makes about 3 dozen cookies.
Step 1: Preheat your oven to 175°C (350°F). Line your sheet pans with baking paper.
Step 2: Cream the butter, peanut butter and sugars together until light and fluffy. Beat in the egg and vanilla. Sift and mix in the flour and baking soda. Finally, stir in the granola. (If you don’t have enough leftover granola to make up 200g, just make up the difference with instant or quick-cooking oatmeal. If you use “fresh” granola, be sure to break down the larger clumps.)
Step 3: Using a disher or a spoon, portion out and place tablespoon-sized dough balls on the sheet pan about 2 inches apart. Bake each tray for 12 minutes.
