Orange Curd Cupcakes

Cupcakes can be so pleasingly uncomplicated. It’s so easy to change up the flavours. And with endless flavour combinations, you’ll never be bored.

Orange Curd Cupcakes

These orangey cupcakes are filled with orange curd (store-bought!). They’re iced with a blue buttercream to welcome the birth of a new boy.

 

INGREDIENTS

110g unsalted butter, softened
220g caster sugar
1/4 tsp salt
2 eggs
Zest from half an orange
200g all-purpose flour
1-1/2 tsp baking powder
1/2 cup vanilla yoghurt
About 1/2 cup orange curd out of a jar

Makes 12 cupcakes.

DIRECTIONS

Step 1: Preheat your oven to 175°C (350°F). Add paper liners to your muffin tins.

Step 2: Cream the butter, sugar and salt together until light and fluffy. Beat in the eggs one at a time, then add in the zest. Sift in the flour and baking powder. Add the yoghurt and mix everything together.

Step 3: Distribute the batter between the 12 cupcake cases. A disher makes the job much simpler. Bake the cupcakes for 25 minutes. Remove and cool.

Step 4: With a large piping tip or sharp knife, make a cavity in each cupcake.

Carefully fill each cavity with 1-2 teaspoons of orange curd.

Step 5: Ice the top of each cupcake to conceal the orange curd filling. Embellish as desired.
