Brownie Bites with Peanut Butter Centres

I’m sad to report, however, that you will need a pan for individual-sized brownies. I’ve got a silicone one from Wilton. The good news is this recipe also fits an 8″ square pan.

 

INGREDIENTS

For the brownie:

125g unsalted butter
125g dark chocolate (70% cocoa solids), broken into small pieces
200g caster sugar
20g unsweetened cocoa
1/4 tsp salt
2 eggs
1 tsp vanilla extract
80g all-purpose flour

For the peanut butter filling:

15g unsalted butter
70g smooth peanut butter
40g icing sugar
1/2 tsp vanilla extract

Makes 24 brownie bites. 

DIRECTIONS

Step 1: Preheat your oven to 175°C (350°F). Spray your silicone baking mould with a baking spray, or if you’re using a square tin, grease and line that.

Step 2: Add the butter, chocolate, sugar, cocoa, and salt to a saucepan and heat gently until everything is melted and combined. Cool. Add in the eggs, vanilla extract, and flour, and mix everything together.

Step 3: In another saucepan, add all the ingredients for the peanut butter filling and heat that gently as well until all the butter has melted. Stir everything well to combine and cool. You should get something like a thick dough. As soon as the filling is cool enough to handle, pinch off and roll 24 teaspoon-sized balls. (16 larger balls if you’re using a square tin.)

Step 4: Fill each mould about one-third of the way. (Or pour in half the batter, if using a square tin.) Gently drop in the peanut butter balls and cover them with the remaining brownie batter. Bake for 25 minutes.
