Granola Muffins

I love granola. I know that their health claims are nothing but marketing spiel, but that doesn’t detract from the fact that they are so darn tasty. However, humid weather is not a friend of lovely crunchy granola. Once granola has lost its crunchiness, I don’t gain as much pleasure from munching on it.

However, that doesn’t spell the end for my stale granola. I give them a second lease of life by throwing them in muffins.

I’ve recently been addicted to Sweet Home Farm’s vanilla cocoa granola and that’s what I’ve used in these muffins. I’ve also complemented these flavours by using vanilla-flavoured yoghurt, although plain would work just as well too.

 

INGREDIENTS

Dry Ingredients:

225g all-purpose flour, sifted
1 tsp baking soda
A pinch of salt
200g granola

Wet Ingredients:

1 cup yoghurt
1 egg
175g caster sugar
1/3 cup vegetable oil
1 tsp vanilla extract

Makes a dozen muffins.

DIRECTIONS

Step 1: Preheat your oven to 200°C (400°F). Line your muffin tin with paper cups.

Step 2: In a bowl, mix together the wet ingredients. In another bowl, combine the dry ingredients.

Step 3: Pour the wet ingredients over the dry ingredients and fold to mix. Fill the muffin cups three-quarters full. (Using a disher would help immensely.)

Step 4: Bake for 22 minutes.
