Peanut Butter Oatmeal Cookies

If you’re craving more peanut-buttery goodness after my Super Moist Peanut Butter Muffins (or just have half a jar left over), then it’s time to whack some in a cookie!

Peanut Butter Oatmeal Cookies

These peanut butter oatmeal cookies are my ultimate incarnation of an oatmeal cookie. They’re salty, sweet, chewy and extremely moreish!

Peanut butter is the main ingredient here, but it’s up to you whether you want to use chunky or smooth. Clearly I’ve opted for super chunky peanut butter, because that saves me from adding additional fillings to the cookie.



50g unsalted butter, softened
50g shortening
100g brown sugar
75g caster sugar
120g peanut butter
1 egg
100g all-purpose flour
50g quick-cooking/instant oats
1 tsp baking soda

Makes about 3 dozen cookies.


Step 1: Preheat your oven to 175°C (350°F). Line your sheet pans with baking paper.

Step 2: Cream the butter, shortening, sugars, and peanut butter. Beat in the egg until the mixture is light and fluffy. Sift in the flour and baking soda. Add the oats and mix everything together.

Step 3: Using a disher or by hand, portion out and place tablespoon-sized dough balls on the sheet pan about 2 inches apart. Bake each tray for 13 minutes.


If you’re a true peanut butter junkie, I’d suggest spreading some peanut butter between two of these cookies to create the ultimate peanut butter sandwich cookie!
