Candy Cane (Peppermint) Brownies

So here’s a great food gift idea for this year’s holidays. It’s simply taking my Best Brownies Ever recipe and shoving some candy canes in them.

What you end up with are rich, fudgy brownies punctuated with spikes of peppermint.

All you need to do is replace the 100g of walnuts with the equivalent weight of crushed candy canes. That’s roughly 6 medium-size candy canes, brutally pounded in a resealable plastic bag with a rolling pin.

The smaller dust-like pieces will meld with the brownie in the oven, but make sure to leave some larger pieces that will still be visible in the brownie and provide some crunch.

To enhance the candy cane flavour, you can add 1/2 teaspoon of peppermint essence/flavouring. If you’re using peppermint oil, just a couple drops will do because it’s strong stuff.

I bake my brownies in a silicone mold that gives me individual bite-sized pieces. However, you could just as easily bake the brownies in an 8″ square tin, refrigerate for a few hours after baking and cooling, and then cut into smaller pieces with a sharp knife.

I try to have little packets of these brownies with me at all times. So anytime I encounter a colleague or a friend, I have the wherewithal to spread a little Christmas cheer.
