Breakfast Muffins

Bored of your morning cereal? Then put it in a muffin!

INGREDIENTS

  • 225g all-purpose flour
  • 1 tsp baking soda
  • A pinch of salt
  • 150g granola
  • 50g your favourite cereal (I use cornflakes for texture)
  • 1 cup yoghurt (plain or your favourite flavour)
  • 1 egg
  • 175g sugar (caster or brown, whatever you have on hand)
  • 1/3 cup vegetable oil

Makes a dozen muffins.

DIRECTIONS

Step 1: Preheat your oven to 200°C (400°F). Line your muffin tin with paper cups.

Step 2: In a large bowl, mix together the flour, baking soda, salt, granola and cereal.

Step 3: In another bowl, combine the yoghurt, egg, sugar and vegetable oil. Mix well.

Step 4: Pour the wet ingredients over the dry ingredients and fold to mix. Fill the muffin cups three-quarters full.

Step 5: Bake for 22 minutes.

If you spend most of your mornings comatose, then you could easily do steps 1 and 2 the night before. Just prepare three bowls of ingredients: (1) the flour, baking soda and salt; (2) the granola and cereal; and (3) the ingredients in step 2.  Refrigerate the bowls.

When you wake up, just turn on your oven and pull the bowls out of the refrigerator to warm up. (In the meantime, go brush your teeth, make coffee, walk the dog etc.) Then just mix everything together as in the directions above and pop the muffins in the oven.
